Apple Fritter Recipe: A Hanukkah Fritter Recipe

Ingredients

  • 2 cups (500 mL) all-purpose flour
  • 2 tbsp. (30 mL) granulated sugar
  • 1 tbsp. (15 mL) baking powder
  • Pinch salt
  • 2 eggs
  • 2/3 cup (150 mL) milk
  • 2 tbsp. (30 mL) vegetable oil
  • 2 cups (500 mL) diced apples (about 2 large apples, peeled and cored)
  • additional vegetable oil for frying
  • cinnamon sugar for topping

Cooking Instructions

  1. In a medium bowl, stir together flour, sugar, baking powder and salt.
  2. In a large mixing bowl, whisk together eggs, milk and 2 tbsp. (30 mL) of vegetable oil. Add the flour mixture to the egg mixture and stir until combined. It will be a very thick batter. Add the diced apples, mixing until they are incorporated into the dough. Don't worry if it's sticky and hard to mix. It will be fine.
  3. Pour enough vegetable oil into a saucepan, wok or deep fryer to a depth of 1-1/2 to 2 inches (4 to 5 cm). Place over medium heat and heat to 375 degrees F (190 degrees C). Use a deep fry thermometer to make sure. When the oil is hot, drop the batter by tablespoonfuls into the hot oil, about 4 or 5 at a time. Fry, turning the fritters over with a wooden spoon so that they brown evenly, for 2 to 3 minutes or until dark golden brown and crisp. Remove from the oil and let drain on paper towel before sprinkling with cinnamon sugar. Repeat with the remaining batter. Serve warm.
