- 2 cups (500 mL) all-purpose flour
- 2 tbsp. (30 mL) granulated sugar
- 1 tbsp. (15 mL) baking powder
- Pinch salt
- 2 eggs
- 2/3 cup (150 mL) milk
- 2 tbsp. (30 mL) vegetable oil
- 2 cups (500 mL) diced apples (about 2 large apples, peeled and cored)
- additional vegetable oil for frying
- cinnamon sugar for topping
- In a medium bowl, stir together flour, sugar, baking powder and salt.
- In a large mixing bowl, whisk together eggs, milk and 2 tbsp. (30 mL) of vegetable oil. Add the flour mixture to the egg mixture and stir until combined. It will be a very thick batter. Add the diced apples, mixing until they are incorporated into the dough. Don't worry if it's sticky and hard to mix. It will be fine.
- Pour enough vegetable oil into a saucepan, wok or deep fryer to a depth of 1-1/2 to 2 inches (4 to 5 cm). Place over medium heat and heat to 375 degrees F (190 degrees C). Use a deep fry thermometer to make sure. When the oil is hot, drop the batter by tablespoonfuls into the hot oil, about 4 or 5 at a time. Fry, turning the fritters over with a wooden spoon so that they brown evenly, for 2 to 3 minutes or until dark golden brown and crisp. Remove from the oil and let drain on paper towel before sprinkling with cinnamon sugar. Repeat with the remaining batter. Serve warm.
