COTTAGE CHEESE BRUNCH BLINTZES

Ingredients

  • Blintz Wrapper Batter:
  • * 1 1/2 cups unbleached all-purpose or whole wheat pastry flour
  • * 1 1/2 teaspoons baking powder
  • * 1 1/3 cups milk
  • * 2/3 cup water
  • * 4 large eggs
  • * 1 teaspoon vanilla extract OR grated zest of 1 lemon
  • * 1/2 teaspoon salt
  • Filling:
  • * 2 packages farmer or pot cheese, 1 pound total
  • * 2 cups large-curd creamed cottage cheese
  • * 3 egg yolks OR:
  • * 3 tablespoons liquid egg substitute
  • * 2 teaspoons vanilla extract OR grated zest of 1 lemon
  • To Finish:
  • * 1/2 stick unsalted butter
  • * low-fat sour cream or plain yogurt
  • * 1 whole cherry or blueberry preserves
