Ingredients

  • Crepes:
  • 1/3 tsp salt
  • 3 eggs
  • 1 1/2 cup milk
  • 1 1/2 cup flour
  • 2 tsp oil
  • Stuffing:
  • 1 tsp thyme leaves
  • 1 cup mushrooms sliced
  • 2 tbsp red bell peppers - diced small
  • 2 tbsp dry sherry
  • 4 tbsp green onions
  • 1 clove garlic minced
  • 8 tbsp unsalted butter
  • 1 tsp dried basil
  • 1 tsp cayenne pepper
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 tbsp all-purpose flour
  • 2 pounds cooked, deviened, shelled scallops/shrimp chopped
  • 5 tbsp heavy cream
  • 1/2 cup grated Swiss cheese (half for recipe, half for topping)
