Apple Oatmeal Muffins


  • Servings: 12
  • 1 egg
  • 1/4 c. half and half (I used fat free half and half)
  • 3 T. canola oil
  • 1/3 c. sugar or Splenda (I used sugar)
  • 1 medium apple, peeled and chopped (I did not peel mine)
  • 2 t. cinnamon
  • 1 c. whole wheat flour
  • 1 c. quick oats (I used old fashioned because that was what I had)
  • 1/4 t. salt
  • 1 t. baking powder
  • 1/2 t. nutmeg
  • 2/3 c. dried cranberries
  • 1/2 c. chopped walnuts
