• 2 2/3 cup onions - medium dice
• 2 2/3 cup mixed bell peppers
• (green, red, yellow)
• 2 ounces butter
• 10 ounces alligator sausage
• (andoulille or smoked sausage okay)
• 2 2/3 cup or 1 lb of shrimp - diced
• 1 pinch salt
• 1/2 tbl Fajita Majic (Paul Prudhomme)
• 1/2 tbl chipotle powder
• chive, parmagiano & creole seasoning for garnish
• Creole Mustard-Tomato Coulis (see my recipe box)
