- 2 2/3 cup onions - medium dice
- 2 2/3 cup mixed bell peppers
- (green, red, yellow)
- 2 ounces butter
- 10 ounces alligator sausage
- (andoulille or smoked sausage okay)
- 2 2/3 cup or 1 lb of shrimp - diced
- 1 pinch salt
- 1/2 tbl Fajita Majic (Paul Prudhomme)
- 1/2 tbl chipotle powder
- chive, parmagiano & creole seasoning for garnish
- Creole Mustard-Tomato Coulis (see my recipe box)
