Ingredients

  • 2 cups water
  • 2 boneless skinless chicken breasts (about 12 ounces or 3/4 pound)
  • 1 cup bulgur wheat
  • 2 tablespoons grated onion
  • 1 cup small diced tomatoes (about 2 Roma tomatoes)
  • 1 cup small diced cucumber (about 1 small)
  • 1 cup cooked chickpeas
  • Zest of 1 lemon
  • 1/4 cup fresh lemon juice (about 1 lemon)
  • 1 teaspoon coarse salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup extra virgin olive oil
  • 2 cups tightly packed parsley leaves, chopped fine
  • 1/2 cup tightly packed mint leaves, chopped fine
  • Hearts of Romaine or Butter lettuce leaves for scooping (optional)
