  • 12 tablespoons (1 1/2 stick or 6 ounces) unsalted butter, cut into cubes
  • 8 ounces Valrhona Lact (41% cocoa) / milk chocolate, coarsely chopped
  • 8 ounces Valrhona Grand Cru Noir Manjari (64% cocoa) / dark milk chocolate, coarsely chopped
  • 1 1/2 cup granulated sugar
  • 4 large eggs, room temperature
  • 2 tablespoons vanilla
  • 1/2 cup all-purpose flour, sifted
  • 1 teaspoon fleur de sel or sea salt
  • 1 tablespoon instant coffee powder
  • 3 ounces dark chocolate, cut into large chunks (optional)
  • Softened butter, cocoa powder for dusting pan
