Ingredients

  • 1/2 cup whole almonds
  • 3 tablespoons olive oil
  • 1 large shallot or small red onion, minced
  • 1 small head cauliflower, or 1/2 a normal one
  • 1 cup couscous
  • 2 teaspoons smoked paprika
  • 1 1/2 cups vegetable stock
  • 1/2 cup chopped parsley
  • Salt and pepper to taste
