  • 2 pounds parsnips, peeled, quartered lengthwise, and cut crosswise into 1/4-inch-thick rounds
  • 8 ounces pasta (fresh pasta if you have it)
  • 1/4 cup chopped green onion (or parsley)
  • Salt and pepper
