Ingredients

  • 4 diver or bay scallops, thinly sliced
  • Poppy seeds, for sprinkling
  • Sea salt, for seasoning
  • 1 cup plus 2/3 tablespoon dashi
  • 1 green apple, sliced horizontally, and into small thin wedges
  • 1 bunch scallions, sliced into 1-inch lengths and sliced vertically as thinly as possible (then placed in ice water)
