- For the tomatoes:
- 12 slices unripe green tomato about 1/4' thick (slice parallel to base)
- 1 cup flour
- 1 egg, beaten with 1 tablespoon water
- 2 cups fresh breadcrumbs or cornmeal
- 2 teaspoons onion powder
- 2 teaspoons garlic powder
- 1 teaspoon dried tarragon
- 1 teaspoon salt
- Oil for pan frying
- Black pepper
