Summer Borscht

Ingredients

Serves 6

  • 1 1/2 pounds red beets, scrubbed and stalks trimmed to 1/2 inch
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 1 clove garlic, minced
  • 2 carrots
  • 1 leek, trimmed of tough green ends and coarsely chopped
  • 1 teaspoon salt, plus more to taste
  • 1/4 teaspoon freshly ground black pepper, plus more to taste
  • 1/4 cup fresh dill, loosely packed
  • 1/4 cup white wine
  • 1 3/4 cups Homemade Chicken Stock, or canned low-sodium chicken broth, skimmed of fat
  • 1/2 small cucumber, peeled and seeded
  • 6 tablespoons creme fraiche or sour cream
  • 6 teaspoons red-wine vinegar, (optional)
