- 1/2 cup extra-virgin olive oil
- 2 thick slices slab bacon, very finely chopped
- Coarse salt and freshly ground pepper
- 1 tablespoon red-wine vinegar
- 4 cups mixed salad greens
- 4 half-inch-thick slices fresh goat cheese, optional
