- 1/2 recipe Pate Brisee (Pie Dough)
- 2 1/2 pounds plums, washed, pitted and quartered
- 1/2 cup granulated sugar, plus more for sprinkling
- 1/4 teaspoon freshly grated nutmeg
- Juice of 1/2 lemon
- 2 tablespoons cold unsalted butter, cut into small pieces
- 2 tablespoons heavy cream
- Confectioners' sugar, for dusting
- Creme fraiche, for serving
