Ginger-rhubarb Muffins

Ingredients

  • 2 1/4 cups all-purpose flour
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 2 Tbs. finely chopped crystallized ginger
  • 3/4 cup sugar
  • 1/2 cup milk
  • 1/2 cup sour cream
  • 1/3 cup vegetable oil
  • 1 egg
  • 1 cup finely chopped rhubarb

Description

Be Sure To Trim The Leaves Off The Rhubarb As They Are Toxic; Use Only The Stalks.
