Ingredients

• 2 cups flour
• 1 T ground cinnamon
• 1 t pumpkin pie spice
• 1 1/2 t baking powder
• 1/2 t salt
• 1/4 t baking soda
• 3 slightly beaten eggs
• 2 cups finely shredded zucchini
• 1 1/2 cups sugar
• 3/4 cup oil
• 2 t vanilla extract
• 1 t lemon extract
• 1 cup golden raisins
• 1 cup pecans
• Pumpkin Pie Spice:
• 4 T ground cinnamon
• 4 t ground nutmeg
• 4 t ground ginger
• 3 t ground allspice
• In a small bowl, combine all ingredients and mix well. Store in a small air-tight container.
