- 1 large carrot, cut into matchsticks about 3 inches long
- 12 oz. dried rice vermicelli, soaked in warm water for 15 minutes and drained
- 2 cups shredded napa cabbage
- 2 green onions, thinly sliced on the diagonal
- 1 lemon, cut into wedges
