- 6 loin pork chops, each 7 to 8 oz. and 1 inch

- 1 tsp. olive oil
- 1 small yellow onion, sliced
- 1 Tbs. fresh thyme leaves
- 2 garlic cloves, minced
- 1 tsp. peppercorns
- Salt and freshly ground pepper, to taste
- 2 tart green apples
- 1 Tbs. unsalted butter
- 1 Tbs. olive oil, or as needed
- 1 generous cup dried apples
- 1 yellow onion, sliced
- 1/4 cup apple cider
- 1/4 cup Calvados or other dry apple brandy
- 8 to 10 tart apples, half green and half red,
;quartered - 3/4 cup water
- Pinch of salt
- 1/4 cup sugar, or to taste
- 1/2 tsp. ground cinnamon
