  • 1 garlic clove, minced ;
  • 1/2 cup extra-virgin olive oil, plus more for brushing ;
  • 1/2 cup grated Parmigiano-Reggiano cheese ;
  • Kosher salt and freshly ground pepper, to taste ;
  • 1 1/2 lb. boneless, skinless chicken breasts, pounded 1/2 inch thick ;
  • 3/4 lb. fusilli, cooked al dente, 1/2 cup pasta water reserved ;
  • 6 oz. baby spinach ;
