Pecan Pumpkin Butter Pie With Butterscotch Cream

Ingredients

  • 4 eggs
  • 2 cups (about 1 1/3 jars) pecan pumpkin butter
  • 2 cups evaporated milk
  • 1 prebaked and cooled deep-dish piecrust (see related recipe at left)
  • 1 cup firmly packed light brown sugar
  • 1/4 cup light corn syrup
  • 4 Tbs. (1/2 stick) unsalted butter, cut into pieces
  • 1/4 tsp. kosher salt
  • 1 1/2 cups heavy cream
  • 1 Tbs. bourbon (optional)
