- 2 large aubergines, sliced
- 350 ml yogurt, such as Onken Natural Set Yogurt
- 2 eggs, beaten
- 25 g plain flour
- 1/4 tsp dried mustard, optional
- 100 g feta cheese
- 25 g parmesan, for sprinkling
