Mexican chicken burger

Ingredients

For the chicken

  • 1 tsp ground cumin
  • 2 tsp brown sugar
  • 2 tsp ground paprika
  • 2 tsp dried red chilli flakes
  • 2 cloves garlic, crushed
  • 1 lemon, juice only
  • 2 chicken breasts, butterflied
  • 1 tsp olive oil
For the onion and peppers

  • 1 tbsp olive oil
  • 1 onion, sliced
  • 1 green pepper, seeds removed, sliced
For the tomato salsa

  • 8 cherry tomatoes, chopped
  • red onions, sliced
  • 2 tbsp roughly chopped coriander
For the guacamole

  • 1 ripe avocado
  • green chilli, finely chopped
  • red onion, very finely chopped
  • - 1 limes, juice only, to taste
  • 2 tbsp chopped coriander
To serve

  • 2 large burger buns, split in half
  • 4 tbsp soured cream
  • 4 leaves baby gem or iceberg lettuce
  • tabasco
  • 1 lime, cut into wedges
