Beef, mushroom and onion pie

Ingredients

For the filling

  • 16 button onions
  • 2 tbsp olive oil
  • 2 field mushrooms, chopped
  • 1 tbsp vegetable oil
  • 700 g braising beef, such as rib-trim, trimmed of sinew and cut into 3cm cubes
  • 1 tbsp flour
  • 4 shallots, chopped
  • 2 cloves garlic, chopped
  • 2 tomatoes, chopped
  • 550 ml stout
  • 1 litres beef stock
  • 1 star anise
  • 1 sprigs thyme
For the pie crust

  • 200 g flour, plus extra for dusting
  • 100 g butter
  • 1 packets ready rolled all-butter puff pastry
  • 1 egg, lightly beaten
