Seasonal vegetable curry

Ingredients

  • 100 g cashew nuts
  • 500 g mixed seasonal vegetables, such as broccoli, cauliflower, squash and swede, cut into 2-3cm chunks
  • 2 tbsp sunflower oil
  • 1 onion, finely sliced
  • 3.5 piece ginger, peeled and crushed or very finely chopped
  • 2 cloves garlic, crushed
  • 2 green chillies, slit lengthways
  • tsp ground turmeric
  • 400 g can coconut milk
  • 4 green cardamom pods
  • 4 cloves
  • 2 cm piece cassia bark or cinnamon sticks
  • 5-6 fresh curry leaves
  • 1 tbsp chopped coriander
  • 200 g spinach
To serve

  • steamed rice
  • onion salad
