Ingredients

For the choux pastry

  • 115 g butter, plus extra for greasing
  • 185 g plain flour
  • 5-6 eggs, lightly beaten
For the spiced pastry cream

  • 1.5 litres milk
  • 1 vanilla pod, split lengthways, seeds scraped
  • 2.5 cm cinnamon sticks
  • 4 cloves
  • 1 bay leaf
  • 1 star anise
  • whole nutmeg, grated
  • 250 g caster sugar
  • 12 egg yolks
  • 75 g plain flour
  • 70 g cornflour
For the chocolate sauce

  • 200 g 70 per cent cocoa solids dark chocolate, plus extra for sticking
  • 100 g 50 per cent cocoa solids dark chocolate
  • 160 ml full-fat milk
  • 40 g salted butter
