- 12 egg yolks
- 75 g plain flour
- 70 g cornflour
- 200 g 70 per cent cocoa solids dark chocolate, plus extra for sticking
- 100 g 50 per cent cocoa solids dark chocolate
- 160 ml full-fat milk
- 40 g salted butter
