Ingredients

  • 1 tbsp dijon mustard

  • 350 g cooked, shelled prawns
  • 2 avocados
  • 2 tomatoes, seeds removed, finely diced
  • 1 shallots, finely chopped
  • 2 tbsp chopped chives
  • 4 sprigs chervil
For the sauce

  • 6 tbsp mayonnaise
  • 2 tbsp tomato ketchup
  • 1 tbsp double cream
  • 1 tsp brandy
  • 1 tsp creamed horseradish
  • lemon, juice only
  • 4 drops tabasco
