Ingredients

For the marshmallows

  • 500 g caster sugar
  • 200 g water
  • 50 g liquid glucose
  • 120 g egg whites, about 4 egg whites
  • 5 leaves gelatine, soaked in cold water
  • 1 tsp orange flower water
  • vegetable oil or groundnut oil, for greasing
  • about 3 tbsp mixture icing sugar and cornflour, for dusting
  • 1 packets digestive biscuits
  • 2 tbsp raspberry jam
For the sauce

  • 100 ml milk
  • 100 ml double cream
  • 150 g dark chocolate, finely chopped
