Salt and pepper squid with mango chutney

Ingredients

For the mango chutney

  • 1 tbsp brown sugar
  • 1 star anise
  • 5 black peppercorns
  • 1 red chilli, sliced, seeds left in
  • 4 thai lime leaves, ripped
  • 45 g tamarind paste
  • 1 mango, peeled, stoned and cut into 1cm dice
  • 4 plums, peeled, stoned and cut into 1cm dice
For the squid

  • 2 litres vegetable oil
  • 1 tbsp black peppercorns
  • 1 tbsp white peppercorns
  • 2 tbsp cornflour
  • sea salt
  • 4 whole squid, including legs, cleaned
For the salad

  • small punnetgarlic chives, few fresh chives, chopped
  • small punnet shiso leaves, or salad cress
  • basil
  • 0 1/2 limes
  • dashextra virgin olive oil
  • salt and black pepper
