For the mango chutney- 1 tbsp brown sugar
- 1 star anise
- 5 black peppercorns
- 1 red chilli, sliced, seeds left in
- 4 thai lime leaves, ripped
- 45 g tamarind paste
- 1 mango, peeled, stoned and cut into 1cm dice
- 4 plums, peeled, stoned and cut into 1cm dice
- 2 litres vegetable oil
- 1 tbsp black peppercorns
- 1 tbsp white peppercorns
- 2 tbsp cornflour
- sea salt
- 4 whole squid, including legs, cleaned
- small punnetgarlic chives, few fresh chives, chopped
- small punnet shiso leaves, or salad cress
- basil
- 0 1/2 limes
- dashextra virgin olive oil
- salt and black pepper
