- 1 small onion, finely chopped
- 2 cloves garlic, finely chopped
- 200 g arborio risotto rice
- 500 ml Barolo red wine
- 500 ml chicken stock, hot
- 1 x 175 g head radicchio, halved, base trimmed and leaves sliced
- 25 g butter
- 30 g grated parmesan, plus extra, to serve
