Sausage, radicchio and barolo wine risotto

Ingredients

  • 175 g spicy Italian sausages, (see Cooks note, below)
  • 6 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 200 g arborio risotto rice
  • 500 ml Barolo red wine
  • 500 ml chicken stock, hot
  • 1 x 175 g head radicchio, halved, base trimmed and leaves sliced
  • 25 g butter
  • 30 g grated parmesan, plus extra, to serve
