Ingredients

  • 50 g caster sugar
  • 50 ml double cream
  • 200 g raspberries
For the fennel oil

  • 1 bulb fennel, with fronds, thinly sliced
  • 50 g caster sugar
  • 1 tbsp water
  • 4-5 mint leaves
  • 3 tbsp olive oil
For the decoration

  • cocoa powder
  • vanilla ice cream
  • fennel
  • sprigs mint
