Ingredients

Soulatouille

  • 3 tbsp olive oil
  • 1 large onion, diced
  • 1 tbsp cumin seeds
  • 1 tbsp dried red chilli flakes
  • 2 tbsp cajun seasoning
  • 1 clove garlic, chopped
  • 5 cm peeled and diced ginger
  • 1 large aubergine
  • 500 g fresh okra, or substitute canned
  • 1 large potato, peeled and diced
  • 400 g canned chopped tomatoes
For the jerk catfish

  • 1 bunches parsley, finely chopped
  • 1 Scotch bonnet chilli, finely chopped
  • 1 bunches spring onions, finely chopped
  • 1 lime, juice and zest
  • 1 tsp mixed spice
  • 2 catfish fillets
  • sunflower oil, for frying
  • peas and rice, to serve
