- 500 g fresh okra, or substitute canned
- 1 large potato, peeled and diced
- 400 g canned chopped tomatoes
- 1 bunches parsley, finely chopped
- 1 Scotch bonnet chilli, finely chopped
- 1 bunches spring onions, finely chopped
- 1 lime, juice and zest
- 1 tsp mixed spice
- 2 catfish fillets
- sunflower oil, for frying
- peas and rice, to serve
