Cod fillet with shellfish and garlic

Ingredients

For the garlic butter

  • 1 clove garlic, crushed
  • 100 g unsalted butter
  • 1/2 tsp brandy
For the shellfish

  • 200 g mussels
  • 200 g cockles
  • 200 g clams
  • 1 large shallots, finely chopped
  • 30 ml dry white wine
  • 1 tsp freshly squeezed lemon juice
  • 1/2 tsp fish sauce
  • small handful mixed herbs, (tarragon, parsley, chervil, chives)
For the cod

  • 2 x 180 g cod fillets, skin on
  • 4 tbsp butter, melted
  • sea salt and freshly ground black pepper
