Ingredients

  • 1 kg braising steak, cubed
  • 350 ml red wine
  • 4 sprigs rosemary
  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 large cloves garlic, chopped
  • 4 streaky bacon, roughly chopped
  • 1 tsp cumin seeds
  • 2 x 400 g canned chopped tomatoes
  • 100 g dried cannellini beans, soaked overnight and drained
  • 1 tsp dried red chilli flakes
  • 1 tsp smoked paprika
  • 1 sugar cube
  • fine sea salt and freshly ground black pepper
For the muffin mixture

  • 200 g plain flour
  • 2 tsp baking powder
  • 125 g cornmeal or polenta
  • 1 tsp caster sugar
  • 1 tsp salt
  • 100 g sweetcorn
  • 200 g mature cheddar cheese
  • 1 egg, beaten
  • 300 ml milk
  • 50 g butter, melted, plus extra for greasing
