Ingredients

For the stuffing

  • 1 shallots, finely chopped
  • 50 g pork sausage meat
  • 4 basil
For the chicken and bacon

  • 2 x 175 g corn fed chicken breast supremes
  • 1 tbsp olive oil
  • 6 streaky bacon
For the mashed potato

  • 2 potatoes
  • 2 tsp butter
  • 2-3 tbsp hot milk
  • salt and black pepper
For the eggs

  • 6 slices black pudding
  • 1 tbsp olive oil
  • 6 quail's eggs
For the mange tout

  • 50 g mangetout, shredded
  • 1 tsp ginger, finely chopped
  • 2 tbsp sherry vinegar
  • 6 tbsp extra virgin olive oil
For the garnish

  • few sprigs chervil
