- 1 cauliflower, broken into fairly chunky florets
- 7.5 cm ginger, peeled and coarsely chopped
- 8 cloves garlic, peeled and coarsely chopped
- 4 tbsp water, plus 600ml
- 1 tsp black mustard seeds
- 1 tsp cumin seeds
- 0.25 tsp kalonji or black onion seeds
- 0.25 tsp fennel seeds
- 0.5 tsp turmeric
- 1 tsp ground cumin
- 2 tsp ground coriander
- 1 tsp cayenne pepper
- 1.25-1.5 tsp salt
- 450 ml tomatoes, finely chopped
- 2 carrots, peeled and cut into 1cm thick rounds
- 0.5 tsp garam masala
- 150 g peas, fresh, or frozen and defrosted
