Ingredients

For the apple butter

  • 2 kg Granny Smith apples
  • 400 ml cider
  • 675 g brown sugar, approximate quantity
  • 2 tsp ground cinnamon
  • 1 tsp ground cloves
  • 1 tsp allspice berries
  • 2 lemons, juice only
For the apple pancakes

  • 1 cooking apple
  • 1 tsp butter
  • 1 egg, separated
  • 1 tsp apple butter
  • 1/2 tsp ground cinnamon
  • 100 g plain flour
  • 100 ml buttermilk
  • salt and black pepper
  • vegetable oil, for frying
To serve

  • 12 rashers sweetcure bacon, grilled
  • maple syrup, for pouring
