Ingredients

For the burgers

  • 450 g chicken, (thigh and breast meat), skin removed
  • 1 red chilli, seeds removed and chopped
  • 1 tsp Thai curry paste
  • small handful coriander, roughly chopped
  • 1 small shallots, chopped
  • 1 clove garlic, crushed
  • 1/2 tsp ginger, fine chopped
  • 1 lime, juice only
  • 3 tbsp olive oil, for frying
  • sea salt and freshly ground black pepper
For the salad

  • large bunch flat leaf parsley
  • 1/2 red onion, chopped finely
  • 1 tbsp olive oil
  • 1 lime, juice only
  • sea salt and freshly ground black pepper
