Luxury fish pie with rosti caper topping

Ingredients

  • 700 g halibut
  • 225 g fresh king scallops, including the coral, cut in half
  • 110 g raw tiger prawns, thoroughly defrosted if frozen, and peeled
  • 150 ml dry white wine
  • 275 ml fish stock
  • 1 bay leaves
  • 50 g butter
  • 50 g plain flour
  • 2 tbsp crme frache
  • 6 cornichons, (continental gherkins), drained, rinsed and chopped
  • 1 tbsp parsley, chopped
  • 2 tsp dill, chopped
  • 1 pinches black pepper
For the rsti caper topping

  • tbsp salted capers, or capers in brine, drained, rinsed and dried
  • 900 g potatoes, Dsire or Romano, evenly sized if possible
  • 50 g butter, melted
  • 50 g strong cheddar cheese
