- 700 g halibut
- 225 g fresh king scallops, including the coral, cut in half
- 110 g raw tiger prawns, thoroughly defrosted if frozen, and peeled
- 150 ml dry white wine
- 275 ml fish stock
- 1 bay leaves
- 50 g butter
- 50 g plain flour
- 2 tbsp crme frache
- 6 cornichons, (continental gherkins), drained, rinsed and chopped
- 1 tbsp parsley, chopped
- 2 tsp dill, chopped
- 1 pinches black pepper
- tbsp salted capers, or capers in brine, drained, rinsed and dried
- 900 g potatoes, Dsire or Romano, evenly sized if possible
- 50 g butter, melted
- 50 g strong cheddar cheese
