Ingredients

  • 2 large baking potatoes, peeled
  • 1 tsp strands saffron
  • 300 g lemon sole fillets
  • squeeze of lemon juice
  • salt, and freshly ground black pepper
For the shrimp sauce:

  • 200 g smoked shell-on shrimps
  • 1-2 tbsp olive oil
  • 2 clove garlic, finely chopped
  • 1 large shallots, finely chopped
  • white part of a leeks, finely sliced
  • 2 tbsp tomato pure
  • 30 ml brandy
  • 225 ml fish stock
  • 112 ml double cream
