Salad of crispy Parma, two beans and croutons with walnut dressing

Ingredients

  • 10 slices Parma ham
  • 25 g butter
  • 50 g bread, cut into cubes
  • 150 g mixed radicchio and rocket
  • 100 g French beans, lightly cooked
  • 100 g broad beans, lanched and peeled
  • 5 g flat leaf parsley
  • 2 tbsp extra virgin olive oil
  • parmesan shavings, to serve
For the dressing:

  • 2 slices white bread, roughly chopped
  • 4 tbsp milk
  • 2 clove garlic, peeled
  • 1 lemon, juice and zest
  • 175 g walnuts, shelled
  • 150 ml extra virgin olive oil
  • salt, and freshly ground black pepper
