Red onion polenta tatin

Ingredients

  • 55 g butter
  • 900 g red onions, thinly sliced
  • 2 clove garlic, crushed
  • 2 tbsp white wine
  • tbsp rosemary, chopped
  • 1 tbsp light brown sugar
  • 3 large red peppers, quartered, cored and deseeded
  • 1 tbsp capers, rinsed and drained
  • 4 anchovy fillets, cut into slivers
For the polenta pastry:

  • 170 g plain flour
  • a pinch of salt
  • 85 g polenta
  • 140 g butter, cut into small pieces
  • 30 g parmesan, freshly grated
  • 1 egg, beaten
