Ingredients

Main:

  • 24 wonton wrappers, (available fresh or frozen from hinese supermarkets)
  • 2 roast duck legs, or take-away portions of crispy aromatic duck
  • 1 tsp sesame oil
  • 1 tsp chopped red chillies
  • 1 tsp chopped garlic
  • 1 tsp chopped ginger
  • 1 tbsp hot and sweet sauce
  • 1 tsp chopped coriander
  • 1 egg white
  • sunflower oil, for deep frying
  • mixed salad leaves
For the dressing:

  • 4 tbsp light soy sauce
  • 1 tsp sesame oil
  • juice of 4 limes
  • 1 tbsp mirin
  • 1 tsp white wine vinegar
  • 50 ml olive oil
  • 1 tbsp hot and sweet sauce
