2 cups flour
4 teaspoons baking powder
1 teaspoon salt
1 teaspoon sugar
1/2 teaspoon baking soda
1/4 cup butter, very cold
1/4 cup shortening
1 1/4 cups sweet potatoes, cooked and mashed
1 cup scallions, thinly sliced, (white and green part)
1/2 cup buttermilk
1/2 cup butter, melted

Dry Rub:

1/4 cup light brown sugar
1/4 cup onion powder
1/4 cup garlic powder
1/4 cup thyme leaves, dried
1/4 cup oregano leaves, dried
1/4 cup kosher salt
1/4 cup blackening spice
3 tablespoons ground coriander
3 tablespoons black pepper
1/2 cup olive oil, divided

Sweet and Vinegar Mopping Sauce:

2 1/4 teaspoons vegetable oil
1/4 cup onion, finely chopped
1 clove garlic , minced
1/2 teaspoon jalapeno pepper, finely chopped, seeds removed
1 cup ketchup
1 cup water
2 tablespoons apple cider vinegar
1/4 cup dark molasses
2 tablespoons honey
2 tablespoons light brown sugar, packed
1 tablespoon balsamic vinegar
1 tablespoon soy sauce
2 1/4 teaspoons blackening spice
3/4 teaspoon black pepper
