  • 1/4 cup plus 5 tsp canola oil, divided
  • 1/4 cup fresh lime juice
  • 1 tablespoon tamari (or soy sauce)
  • 2 tablespoons light brown sugar
  • 1 1/2 teaspoons sea salt, plus more to taste
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon ground coriander
  • 4 boneless, skinless organic chicken breasts (about 5 oz each)
  • 3/4 cup red quinoa
  • 1 1/2 cups chicken broth (or stock)
