- 1 large or 2 small tart summer apples, unpeeled, cored, and sliced into 1/4 inch slices
- 1 cup granulated sugar
- 3 tablespoons powdered tapioca or cornstarch
- 1 teaspoon fresh lemon juice
- Pinch of kosher salt
