  • 1/4 cup chopped walnuts
  • Zest of 1 orange
  • 1/4 cup fresh flat-leaf parsley, finely chopped
  • 2 cloves of garlic, finely chopped
  • For the Soup:
  • One 2 lb butternut squash, halved and seeded
  • 4 tablespoons (1/2 stick) unsalted butter
  • 1 medium onion, finely chopped
  • 5 cloves garlic, chopped
  • 1 small red Chile pepper, chopped (or ½ tsp Tabasco)
  • 4 cups vegetable broth
  • 1 tablespoon lime juice
  • 1/2 cup Crème Fraiche, for garnish
