Orange Turkey & Butternut Chili

Ingredients

  • 1 1/4 pounds butternut squash, peeled, seeded, and cut into 1/2-inch cubes (about 2 1/2 cups)
  • 6 teaspoons olive oil
  • 1 1/4 pounds turkey breast, cut into 1/2-inch cubes
  • 1 large orange bell pepper, cut into 1/2-inch squares
  • 1 1/2 cups finely shredded carrots (about 4 ounces)
  • 3 cloves garlic, minced
  • 2 tablespoons flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon chipotle chile powder
  • 3 cups reduced sodium chicken broth
  • 3 strips orange zest, very finely slivered
  • 3/4 cup shredded Cheddar cheese
