Spiced Carrot Cake

Ingredients

  • CAKE
  • 2 cups all-purpose flour, spooned and leveled
  • 1 teaspoon ground cardamom
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 2 teaspoon ground allspice
  • 1 stick (4oz) unsalted butter, melted and cooled to room temperature
  • 1 cup granulated sugar
  • 4 large eggs
  • 3 cups grated carrots (on the large holes of a box grater)
  • 2/3 cup roasted, salted cashews, coarsely chopped
  • FROSTING
  • 2 sticks (8oz) unsalted butter, softened
  • 3/4 cup confectioners’ sugar
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon baking soda
  • 2 8oz packages cream cheese, at room temperature
