Ingredients

  • 1 3/4 cups all-purpose flour

  • 1/2 stick (1/4 cup) cold unsalted butter or margarine, cut in pieces
  • 1/4 cup solid vegetable shortening
  • 4 ounces extra-sharp Cheddar cheese, coarsely shredded (1 cup)
  • 6 tablespoons cold water
  • APPLE CIDER FILLING
  • 2/3 cup sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon ground cinnamon
  • 3/4 cup apple cider or juice
  • 3 pounds tart apples (Granny Smith, Pippin, Greening, Northern Spy), peeled, quartered, cored and cut in 1/4-inch-thick slices (about 9 cups)
  • 2 tablespoons cold unsalted butter or margarine, cut in small pieces
